3.73 and 4.10 are very common street/strip gears. You only need to swap out the ring gear and the pinion gear. It's always good to get an install kit that way you get a new crush sleeve, bearings, and shims.

The old Mys10.com tech section use to have a "rule of thumb" for gear changes. For every size you go up (3.42->3.73, 3.73->4.10) you loose roughly 10mph off your top speed and it feels like you gained about 30 hp because your truck will accelerate quicker.
As for swapping the gears, it just does no make sense financially to swap the gears out in the 10 bolts. For the price of a set of gears and rebuild kit you are looking at around $200+. For that kind of money you could get another use rear end for your truck with the gears you want already set up because GM 10 bolts are about as common as rats in NY. If you look hard enough you can find one with a posi. If you don't mind spending a little more money you can get disc brakes too.
If you really have your heart set on disc brakes and a posi, the cheapest and easiest way to get it is to go with the Ford 8.8 (I think that's what it is called). That rout has its own challenges which there are threads about on this site already.

The 8.8 Ford will also take the power of the future V8 swap. Check to see what rear you have, Some 4.3 S10's have the 8.5 rear. My 2000 4.3 had the 8.5. Summit racing didn't believe me when I told them the gears they told me would fit didn't fit. if you have the 8.5 you are lucky, my 8.5" rear holds up to a 530+ hp 350. The 8.8 is the way to go if you have the 7.5" ring gear. they are everywhere and parts are easy to get for them. have fun.

In the codes on your glovebox door you will find a set starting with the letter 'G' which will be the code for the axle ratio and positrac if you have one. G80 code is the positrac called a GovLoc and the axle ratios will be like a GT4 or GU6 or something along those lines. Then find the sticky on here with the axle codes and it will translate the code into the axle ratio in your truck. Or just get the codes and one of us on here will help you figure it out. :)

Just buy a set of 3.73's or 4.10's and be done with it.

9 posts above this one and not a single post said anything about tire size. The ring and pinion gear set is only 1/3 of the equation.

Was assuming the stock 26.8"? tire.

I know you know Pumpkin. I had to mention the tires being important because it's not the transmission that determines everything, nor the ring and pinion set or the tire size, it's how they all work together.
